"Pumpkin soup"
The classic October dish!
Ingredients for 4 people:
1 Hokkaido pumpkin
2 carrots
2 potatoes
1 onion
3 tablespoons of oil
salt and pepper
2 tsp broth
200g minced meat
4 tbsp sour cream
chives
Remove the seeds from the Hokkaido pumpkin, do not peel, and dice. Peel and dice the potatoes, carrots, and onions. Sauté all ingredients in oil, then deglaze with 1 liter of water.
Add the spices and broth and simmer for 15 minutes, then purée. Brown the ground meat and stir in the sour cream and chopped chives. If desired, garnish with pumpkin seeds and pumpkin seed oil.
"Pumpkin gratin"
Delicious from the oven!
1kg diced pumpkin flesh
2 leeks, sliced
200g diced bacon
2 cups of sour cream
salt and pepper
Layer the pumpkin flesh and leeks in a casserole dish.
Mix together bacon, sour cream, salt and pepper
and pour over the pumpkin and leek mixture.
Bake at 175°C for approximately 45 minutes.
"Mediterranean style pumpkin"
Also delicious baked in the oven!
Pumpkin (quantity/variety as desired)

Pesto
favorite herbs
350g pasta
150g smoked ham
Parmesan cheese
Cut the pumpkin into bite-sized pieces and spread them on a greased baking sheet.
Sprinkle with a little salt, pepper, pesto, and/or your favorite herbs. Bake the pumpkin at 200°C for 20-30 minutes. Meanwhile, cook the pasta al dente. Dice the ham and mix it with the pasta and pumpkin. Finish with Parmesan cheese.
"Pumpkin vegetables"
Delicious straight from the pan!
600g diced pumpkin
300g onions
1 cup of cream
1 tbsp vinegar
rapeseed oil
Salt
Slice the onions and sauté them in oil.
Then add the pumpkin.
Deglaze with the cream and cook for about 10 minutes until al dente.
Season with vinegar and salt.
"Pumpkin fries"
Fries with a twist, also very tasty!
1kg pumpkin flesh (any variety)
1 tsp paprika powder
2 tbsp olive oil
salt and pepper
Cut the pumpkin flesh into French fry sticks.
Mix together olive oil, paprika powder, salt and pepper, and combine with the pumpkin.
Place the French fry sticks on a baking sheet lined with baking paper and bake at approximately 200-220°C for 25 minutes.
